This Euro-style Chef’s Knife is made from SF100 (Sliver Fox 100) stainless steel, a fine-grained, high-performance stainless made in Sheffield originally conceived from razor blades with a similar composition to AEB-L.
It features a slight brute de forge finish on the choil with a mostly Full Flat ground blade with a slight convex that is nice and fine behind the edge for ease of cutting.
The blade is 180mm, a very versatile length.
The construction is classic full tang with stainless steel pins, and one of my personal favourite woods for the handle – Spalted Tamarind.
The tree that produces the delicious paste found in Asian cookery also produces a gorgeous light-coloured wood. The Spalting is the result of fungal colonisation that is stopped by the stabilisation process I use when treating the wood.
Price – £280 including postage
