This hand forged santoku style knife is made from VG10 Coreless Stainless steel from Takefu.
With high hardness and wear-resistance, great edge retention but relatively easy sharpening there is a reason why this is a steel very highly favoured by high end Japanese smiths (VG stands for V-Gold – Gold Standard).
It features a brute de forge finish and random Damascus pattern along the length of its 140mm blade and is Half Flat ground, thin and nimble, perfect for small vegetables, meat and fish.
The construction is hidden tang with a corby bolt for extra secure connection and handle made from an ebony bolster and Red Mallee, a very hard with Australian wood with deep red colour.

This Knife was made for the Damasteel DCI Show 2025.
For when you want a blade a little longer and thinner than a traditional paring knife, perhaps for boning out a game bird, or prepping an octopus, this nimble knife is ideal. The complex, hypnotic pattern of the Grabak steel works nicely with the textured, yet stark bleached deer antler.
Museum fit onto a brut de forge full tang handle with a fine slim blade, the edge on this a real laser. See it in action.

Hand Forged Bread Knife, Indonesian Oak - AEB- L
This hand forged bread knife is made from AEB-L steel, a fine-grained, high-performance stainless originally conceived from razor blades.
It features a brute de forge finish along the length of its 230mm blade and is half flat ground with serrations on both sides of the blades of better bread cutting performance.
The construction is classic full tang with stainless steel pins, and some very unique Indonesian Oak for the handle which for me is almost reminiscent of the fine feathers of some tropical bird.
Knives are sold to over-18s only. Age is verified on delivery.
Every knife is forged, no two are the same!
The three things my customers tell me they care about most.
🔪 Forged, not factory-made
Every blade is shaped by hand from raw steel in a coal forge my brother and I built ourselves. Traditional bladesmithing, no mass production here!
🇬🇧 Made entirely in the UK
Designed and built at the family workshop in Wiltshire, from raw billet to finished handle - each knife tells it's own story!
👨🍳 Made by a chef, for people who cook
I spent years in professional kitchens, including L'Enclume, and I still test every design in my own private cheffing work.

Meet Me: From coal forge to Michelin kitchens.
My name is Ben. I spent five years cheffing in the French Alps before a homemade coal forge, built from an old oil drum, turned into an obsession. While working at L'Enclume in the Lake District, one of the UK's top restaurants - I kept making knives on the side.
Today I forge full-time at the family workshop in Wiltshire, and I still work as a private chef, so every knife is tested in a real kitchen first. I'm invited back each year to work with Damasteel, the world's leading stainless Damascus steel producer.
