This hand forged bread knife is made from VG10 Coreless Stainless steel from Takefu.
With high hardness and wear-resistance, great edge retention but relatively easy sharpening there is a reason why this is a steel very highly favoured by high end Japanese smiths (VG stands for V-Gold – Gold Standard).
It features a brute de forge finish and random Damascus pattern along the length of its 240mm blade and is Half Flat ground with serrations on both sides for better bread cutting performance.
The construction is classic full tang with stainless steel pins, and some very unique Indonesian Oak for the handle which for me is almost reminiscent of the fine feathers of some tropical bird.
Price - £435 including postage
